We rented three ATVs for two days. It's about €15 per person plus gas and more than worth it. We spent the day zooming around the island and ended up at its very tip: the lighthouse (Faros in Greek) at the cape of Akrotiri. Kate, Jess and I spent a good chunk of time climbing out farther and farther on rocks that overlooked the water. We could see the edge of the world and all of Santorini, from tip to tip.
